I had a little leftover pie crust so I decided to make one of my favorite treats. A fresh apricot tart. This is so simple, yet just amazing. Roll out pie crust or tart dough. Set on cookie sheet with parchment paper or a silicone liner. Cut up a few apricots and toss with a little bit of corn starch. Spoon fruit on crust. Sprinkle generously with sugar. Roll up the sides of the crust. Bake for about 20 minutes at 350 degrees. Save one for the morning if you can, it is perfect with coffee!
Yet another pastry that had too short a time on this planet. If only all the desserts knew that coming into this house was their last stop on this planet. Consumed to the crumb. Enjoyed, loved, tasted, consumed. Yummy, yummy treats.

Wow so easy....tell me my silicone liner is bigger than my cookie sheet will it be OK to cut it to size? Meant to ask you ages ago.
