I was inspired to make these cupcakes from a Facebook exchange between a few friends. Felex made his favorite chocolate cupcake recipe, which is a simple one bowl ditty easy enough for kids to do solo. We made a quick chocolate ganache and topped our little delights with cherry jam. Kid friendly quick chocolate cupcakes
Makes 24
2 1/2 cup All purpose flour
2 1/2 teaspoons baking soda
1 teaspoon baking powder
1 1/2 teaspoon salt
1 1/4 cup cocoa powder
2 1/2 cup sugar
2 eggs plus one yolk
1 1/4 cup milk
1/2 cup vegetable oil
1 tablespoon vanilla extract
1 1/4 cup warm water
Preheat oven to 350 degrees
Prepare 2 cupcake pans.
In a large bowl whisk together all the dry ingredients. Make a well in the center and add the remaining wet ingredients. Whisk together until smooth. Divide the batter into the muffin cups, filling about half full. Bake for about 20 minutes or until a cake tester comes out clean.
Frost with a simple ganache
