Barbara Rice

This is a recipe from my sister-in-law - This makes a heavy, dense cake that doesn't need frosting (though you certainly can frost it if you like).

Gayle's Apple Cake

4 cups chopped apples
2 cups sugar
2 eggs
1/2 cup oil
2 cups chopped nuts
1 1/2 tsp vanilla
2 cups flour
2 tsp soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1 tsp salt

Combine dry ingredients and set aside.
Beat eggs in large bowl. Add sugar and beat. Add vanilla, then add oil and dry ingredients alternately. Mix in apples and nuts.
Grease a 9" or 10" springform pan and line with waxed or brown paper, then grease the paper. Pour batter in. Bake at 375 for 10 minutes, then lower temperature to 350 and bake about 1 hour. When toothpick inserted in center comes out clean, cake is done. Let cool on rack completely, then carefully remove pan.
